Introduction: Bacon Cheeseburger Quiche

This is a top family favorite at our house! We like it hot, we like it cold, and if we put it in the freezer then it's still good at nine days old! ;-) We make them in advance to take on trips, as they can be frozen, and then when you thaw them, they're as good as new! You could make one and freeze individual slices to eat for breakfast. Or, if you're going to finish it off within a few days, you can just put it in the fridge and save yourself the trouble of thawing it. :-) You can reheat it in the microwave, or just eat it cold!

This could also be called the "hungryman quiche", since it's made to be substantial and satisfying; not one of those light, delicate quiches! It's also low carb, if you omit the crust. But if you're looking for something low fat, there are other recipes for that :-).

Apologies in advance if the coloring in the photos is weird. Our kitchen lighting is terrible and makes all pictures taken after sunset look dark and greenish, so I adjusted them; I hope I didn't overcompensate.

Step 1: Ingredients

You will need:

  • A 9-inch pie crust (optional) (butter pie crust tutorial here)
  • 4 large eggs or 5 medium ones
  • 1/2 cup cream
  • 1/2 cup mayonnaise
  • 1 1/2 cup shredded cheddar cheese
  • 1 pound ground beef
  • 4 slices bacon
  • 1/2 cup diced onion (optional)
  • a splash or two of Worcestershire sauce
  • dash of salt and pepper
  • sprinkle of garlic powder or steak seasoning

Preheat oven to 425° F.

Step 2: Prepare the Stir-ins

Chop the bacon into small bits. Cook the ground beef, and onion if desired, over medium-high heat until browned. Add a splash or two of Worcestershire sauce. If the bacon is raw, add it in with the beef partway through the cooking. If it's already cooked, like ours, just add it in afterward. Grate the cheese, if it isn't already grated.

Step 3: Mix the Filling

Put the eggs, cream, mayonnaise, and seasonings into a mixing bowl, and whisk them together. Then stir in the meat mixture and the cheese. Pour the resulting glop into the pie plate, and top with more grated cheese (never too much cheese, right?).

Note that in these pictures, I ended up with somewhat more than a pound of ground beef, and I think it was also lean so didn't shrink as much. So don't worry if yours isn't quite as meaty-looking as mine; it'll still be good :-).

Step 4: Bake

Bake at 425° for 15 minutes. Then reduce heat to 350° and bake for another 30 minutes, or until knife inserted in center comes out clean.

Let cool at least 10 minutes before serving.

Step 5: Chow Down!

Now you can cut a nice hefty slice, and enjoy the meaty, cheesy goodness of the Bacon Cheeseburger Quiche! Bon appetit! :-D
