Introduction: Baked Vegetable in White Sauce


This recipe is dedicated to the joy of simplicity. Vegetables soaked in a basic white Italian sauce and baked in the oven. A perfect low-carb weeknight dinner!

This is one of the favorite dinners at home and I love it especially because it is quick to make and super healthy too.


Ingredients:

1 tablespoon salted butter

1 tablespoon maida

2 cups milk

1 tablespoon grated cheese

Pepper Powder (freshly roasted and ground) - As required

Salt - As required

1 cup mixed vegetables :Mushroom, Baby Corn, Carrot, Beans, Peas, Spinach

Finely chopped Garlic

1 tablespoon of Olive Oil

2 teaspoons of bread crumbs

1 Tsp Oregano

Step 1: Cook

Half cook the vegetables in a microwave. The carrot and potato should be half cooked. The vegetables like beans and carrot need not be cooked in prior. They can be cooked on stove.

Step 2: Season It

Mash the potato and carrot together. Add the salt, pepper and oregano. Add in the other vegetables and give a good mix.

Step 3: Prepare Sauce

Melt the butter in a saucepan. Add All purpose flour and fry till it turns opaque.

Step 4: Add Veggies

Add milk and boil the sauce. If it appears too thick add more milk till the sauce is moderately pasty. Add grated cheese, salt and pepper. Mix well. Add in the mashed and seasoned veggies.

Step 5: Bake

Preheat oven at 200 °C. Pour the vegetable white sauce mixture into a baking dish.Pour Olive Oil over the dish and mix well.Sprinkle bread crumbs on top.Bake at 200 °C for about 15 mins.
