Introduction: Buttermilk Biscuits and Vegetarian Sausage Gravy

Seriously, they're effin' delicious. . .and they're sure to fool any of your flesh-gobbling friends.

Step 1: The Best Buttermilk Biscuits Ever

You'll Need:

Hardware:
  • - large mixing bowl
  • - muffin tins
  • - your hands

Software:
  • - 3 cups all purpose flour
  • - 2 tablespoons sugar
  • - 4 tablespoons baking powder
  • - 1 teaspoon salt
  • - 1 teaspoon baking soda
  • - .75 cups butter, cubed and chilled slightly
  • - 1 cup buttermilk

Step 2: Buttermilk Biscuits, Part 2

  1. Preheat oven to 425 degrees Fahrenheit
  2. With your fingertips, combine flour, sugar, baking powder, baking soda, and salt in your mixing bowl
  3. Add butter and gently squish with your fingertips until the mixture forms course crumbs
  4. Add buttermilk and stir until moistened. The mixture will be rather sticky and slightly wet
  5. Spray a muffin tin with cooking spray
  6. Using two spoons, form loose balls of dough and drop into the cups of the muffin tin, gently pressing the tops to level them
  7. Bake approximately 13 minutes or until the tops are golden brown
  8. Allow to cool slightly before slicing horizontally with a sharp knife

These biscuits are delicious with gravy (as follows), but are also great with butter, jam, honey, or any other delicious things you might want to top them with.

Step 3: Vegetarian Sausage Gravy

You'll Need:

Hardware:
  • - a small/medium saucepan
  • - wire whisk
  • - silicone spatula or wooden spoon

Software:
  • - 3 tablespoons butter
  • - 3 tablespoons all purpose flour
  • - 1 cup (8oz) vegetable stock (homemade or store bought)
  • - .25 cup whole milk
  • - 6 vegetarian breakfast sausage patties, room temperature (chopped up or crumbed)

Step 4: Mmm, Gravy

  1. Over medium high heat, gently heat the sausage crumbles until they're warmed through (about 3 minutes)
  2. Remove from the pot and place on a small plate
  3. Heat butter in the pot until melted
  4. Add flour and whisk to combine
  5. Continue whisking until the mixture begins to bubble and browns just slightly
  6. Add stock and milk and lower the heat slightly
  7. Continue whisking until the mixture begins to thicken - this will take approximately 7 minutes. When the mixture coats the back of a spoon and holds it's place when you draw your finger through it, it is thick enough
  8. Add the sausage back into the mixture and allow to heat for about 2 minutes to ensure the sausage is warm
  9. Add salt and pepper to taste

Step 5: The Perfect Southern Breakfast

  1. Cut the biscuits horizontally
  2. Place the bottom portion on a plate and spoon gravy over it
  3. Top with the top portion of the biscuit
  4. Enjoy!
