Introduction: Creamy Pesto Sauce

While the dough is resting is a great time to make your sauce! This is a creamy pesto sauce to go with the egg fettucine we’ll be making once the dough is ready to roll out, but it will also work well with any of the shapes we make in this class.

Step 1: ​Creamy Pesto Sauce Recipe

Serving Size: Enough for 4-6 servings of pasta. (4 as a main dish, 6 as an appetizer)

  • 2 cups fresh basil leaves
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts
  • 2 small cloves of garlic
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
  • 1 tsp coarse kosher salt
  • 1/4 cup heavy cream
  • 2 tbsp butter
