Introduction: Creepy Deviled Egg Eyeballs

Looking for something unique to serve your guests this Halloween? Or are you the one that likes to bring the most talked about dish to the potluck? Well these realistic deviled egg EYEBALLS are the perfect choice. Place them over a bed of black bean spaghetti and not only do you have a unique spooky dish but a complete meal

Step 1: What You Will Need

  • 12 Hard boiled eggs (makes 24 eyeballs)
  • Food Coloring; I used Gel food coloring
  • 12 Jumbo black olives
  • 1 envelope unflavored gelatin
  • Two sharp cutting tubes for cutting egg white iris' and black olive pupils

I used a large pastry tube (tip) for the iris' and a tiny cookie cutter tube for the pupils. You can also use a large plastic straw for the pupils

  • Paintbrushes to paint food coloring and gelatin
  • 1 box Explore Cuisine Black Bean spaghetti

Step 2: Hard Boil the Eggs

I like using my counter-top egg cooker, but you can hard boil them on the stove with water too

Step 3: Cut Each Hard Boiled Egg in Half

Step 4: Remove the Yokes But Save for Later

Step 5: Creating Egg White Eye and Iris Plug

  • Using a large pastry tube (tip), carefully punch a hole through each egg white half and remove egg white plug
  • Save both pieces

Step 6: Creating Egg White Iris

Using a small cookie cutter tube (or large plastic straw), carefully punch a hole through the egg white plug

Step 7: Creating Black Olive Pupil

Using the same cookie cutter tube (or large plastic straw), carefully punch out pupils from the black olive halves

Step 8: Paint the Iris

  • Paint the iris starting from the outside-in or the inside-out
  • Dilute the colors if they are too dark
  • Set aside to dry

Step 9: Begin Contructing Your Dish

  • Place fully cooked black bean noodles (add seasonings and olive oil if you like) on a plate
  • Place the outer portion of the eye right on top of the bed of noodles
  • Push them down a bit to hide the bottom (cut end) of the egg
  • Place a black olive pupil plug into each painted iris
  • Position the corresponding painted iris and pupil to the side. I'm not sure if it matters, but I like using the egg white plug that goes with the corresponding egg white outer eyeball

Step 10: Deviled Egg Filling

  • Using the egg yokes make the deviled egg filling. I just add mayonnaise, mustard and salt and pepper, but you can make yours anyway you like
  • Then using a piping bag, fill each eyeball center with filling. Make sure you fill them to the top
  • Gently push each iris/pupil section down into the filling

If you push too hard and the iris/pupil is below the top of the eyeball, use a toothpick to pull it back up

Step 11: Brush the Top of Each Eyeball With ​gelatin

  • Mix the gelatin according to package instructions
  • Liberally, brush gelatin over each eye

I think the gelatin make the eyeballs look more realistic
