Introduction: Delectable Superfruit Chocolate Bark

This luscious chocolate bark is jammed full of antioxidant-packed superfruits and mineral-rich pepitas (pumpkin seed kernels). It's so stupidly easy to make, you'll be making a new batch every two hours or so as you and your friends polish off each previous batch, and you won't even mind. You'll try desperately not to lick the spatula as you stir and spread the chocolatey goodness. After everything is all spread out in the pan? You can lick the spatula and the bowl to your chocolatey heart's content. I'm sitting here with chocolate on my cheeks and chin. No, I'm not taking a photo.

You'll need:

  • 2 cups Dried Superfruits - You can buy the Made In Nature™ brand Antioxidant Fusion from Costco (organic cranberries, organic raisins, organic tart cherries, organic dry roasted pepita seeds, organic blueberries, organic goji berries), or you can create your own mix of super fruits and seeds/nuts. A good place to find a variety in individual bags is Trader Joe's, or your local health food store.
  • 20 oz. Semi-Sweet Chocolate Chunks (I used the Trader Joe's brand, available in 10 oz. packs)
  • 1 tsp Cinnamon
  • 1/2 tsp Ginger Powder
  • 1/4 tsp Cayenne powder (optional, gives it a spicy kick)
  • Coconut Oil (see step 2)

Step 1: Prepare Your Pan

You'll need either a large cookie sheet, or a baking pan – something with enough space to spread your chocolate far and wide. Line that pan with aluminum foil, lightly oiled. I used coconut oil.

Step 2: Melt Your Chocolate

This is best done in a double-boiler, or a glass bowl set over a saucepan of simmering (not boiling) water. Heat your water, set your bowl into the saucepan so that it sits just above the water. Put the chocolate chunks into the bowl and stir until smooth. This should only take a few minutes.

Step 3: Add Your Spices and Superfruits, Then Chill

Turn off the heat, but leave your bowl over the pan.

First, stir in your spices, then stir in half of the superfruit mixture. Pour this onto your prepared pan and spread it out with a spatula. Sprinkle the other half of the super fruits over the mix, pressing gently to make the fruit stick.

Chill in the fridge until firm, about an hour, then break into pieces and devour. And don't be greedy. Sharing is caring!
