Introduction: Easy Gluten-free Upside Down Cake

I'm not gluten free myself but my close friend is
She won't eat anything with gluten in it as she is highly allergic
But she will eat pineapple which is her favorite fruit
So when I invited her over, I decided to make a gluten free upside down pineapple cake
It came out perfect and she loved it
It was fast and easy to make without the need of special equipment
I definitely will be making this again even though I'm not gluten free

Step 1: Ingredients

1/4 cup butter (I skipped this part because I don't really like my cake oily at the bottom)

1/2 cup sugar (I skipped this part because I think the pineapple was sweet enough)

7 slices pineapple frozen or fresh or even canned (I used more because my friend just loves pineapple)

Maraschino cherries (optional)

1 2/3 cup gluten free all purpose flout

1/2 tsp baking powder

1/2 tsp baking soda

Salt

1/2 cup melted butter oil

3/4 cup brown sugar

1/4 cup granulated sugar or brown sugar

1 egg

1/4 cup yogurt

1/2 cup milk

1/4 cup pineapple juice or water

1 tsp vanilla extract

Step 2: Steps

Preheat the oven to 350 degrees
Add 1/4 cup butter melted to a pan and spread it around the bottom and sides of the pan
Sprinkle the 1/4 cup of brown sugar on the bottom of the pan
Arrange the pineapple slices on the bottom of the pan and place the cherries on the bottom of the pan between the pineapples
In a medium bowl, whisk together the egg, sugar, butter or oil, water or juice, yogurt, and vanilla extract
Add in the flour, baking powder, baking soda and salt
Whisk until fully incorporated and smooth
Pour the batter over the pan with the pineapple and make sure to push the batter into the cracks between the pineapple and cherries
Put the cake into the preheated oven and bake at 350° for 45 to 65 minutes or until a toothpick comes out clean and the cake is golden brown
If the cake starts to brown too much cover the cake with aluminum foil and continue baking
For the cake for 15 to 20 minutes before inverting onto a cake plate. Serve warm or room temperature

Step 3: Results

This is a great cake and is very easy to make and perfect for summer
This cake is great because it's gluten free and is very delicious
I will defiantly be making this cake again
Even those who aren't gluten free will love this cake
