Introduction: Giant Blue Cheese Wedge Salad - Use the Whole Head

I invented this recipe as a response to a very common problem.  Everyone loves the classic steak house wedge.  But when you go to a restaurant they never give you enough.  Lettuce is cheap and has very few calories so why not use more???

The solution...the Whole Head Wedge.  It's also known as the "Wedgewood Wedge" after my neighborhood in Seattle.

Step 1: Ingredients

1 cup blue cheese - I like to mix some Roquefort and other types of blue.  Just make sure you use high quality cheese
3/4 cup mayonnaise
3/4 cup sour cream
1 bunch green onions - diced
1 bunch radishes - thinly sliced
5 slices thick cut bacon - I just microwave for about 5 minutes then cut into bits
4 heads iceberg lettuce - cut it into a cube

Step 2: Mix the Dressing

Put the cheese, sour cream and mayo in a bowl.  Break up the blue cheese with a fork and stir.  If the cheese is stubborn you can use a potato masher.  Mix till creamy, but leave some nice big chunks of cheese.

Step 3: Build the Salad and Eat

Cut the lettuce into big cubes.  Drizzle with some of the dressing and a good amount of bacon bits, radish and green onions.

Don't forget to serve with extra dressing on the table.  You're bound to want more.
