Introduction: Grilled Pizza Skewers

I love making pizza but I had guests who can't eat gluten and some who were lactose intolerant, so I came up with these BBQ Pizza Skewers. The cheese is optional, but this recipe really tastes like pizza. Prep time about 20 minutes and cook time is 10-15 minutes.

Step 1: Preparation

Soak Your Skewers (optional)
You can use a wine bottle or other container, put your wood skewers in, and fill it with water. Soaking can prevent burning.

Make Some Pizza Sauce!
Here's a quick recipe for pizza sauce.

  • One can tomatoes, drained well.
  • Garlic - three cloves, chopped or pressed
  • Olive oil - about 2 tbsp

Mix everything in your food processor until smooth. You only need about third of this, so I recommend saving the rest by freezing it in a muffin tin. Once frozen you can move the portions into a freezer bag.

Step 2: Ingredients

What do you like on a pizza? Well, that's perfect for this recipe! Personally, I like onions, mushrooms, bell peppers, grape tomatoes, and pepperoni and other pizza meats. Cut everything chunky so that it will slide easily onto the skewers.

If adding cheese, grate it and set it aside. You'll add the cheese to the skewers right off the grill, so it melts. Prepare all your ingredients and then heat up the grill.

Step 3: Make the Skewers.

Alternate ingredients and slide them onto the skewers. Fold flimsy meat slices in half or quarters. Once you're happy with your skewers, brush them generously with the pizza sauce.

I cooked them on medium for 10-15 minutes. Remove from heat and immediately add the cheese (you could try adding the cheese while they're cooking, but I was worried about drips). Add some fresh ground salt and pepper.
