Introduction: How to Make Moroccan Hot Sauce (Matbucha)

This instructable will show you how to make my version of morrocan hotsauce. I apologize for the lack of quality pictures, as i only thought to document this after I made it.

making matbucha is not an exact science, this recipe is easy to follow and easy to modify depending on your taste.

Step 1: The Ingredients and Materials

YOU WILL NEED
1 LARGE CAN OF CRUSHED TOMATOES
1 LARGE CAN OF TOMATOES
5- 10 JALEPENO'S (depending on how spicy you want it.)
A JAR OF FROZEN PEELED GARLIC CLOVES
AN ONION OR TWO
CANOLA OIL
CAYENNE PEPPER
BLACK PEPPER
SALT

A LARGE POT
A MEDIUM FRYING PAN
A SPOON
A SPATULA
A CHOPPING BOARD AND A SHARP KNIFE.

Step 2: Chop the Stuff Up!

here comes the dangerous part. chopping jalapenos. be very careful not to get any of this stuff in your eyes.
start chopping!
depending on how chunky you want it, chop you're jalepenos and onions. add as much garlic as you want.
If you have any other vegetables you think might go good with youre matbucha (tomatoes, bell peppers, celery etc..) nows the time to add them.
I usually use this formula "5 jalapenos- half a small onion- 5 garlic pieces.

Step 3: Poure the Tomato Sauce and Crushed Tomatoes Into the Pot.

POUR THE TOMATOE SAUCE AND CRUSHED TOMATOES INTO THE POT.
THEN ADD CAYENNE PEPPER AND BLACK PEPPER TO TASTE.
THEN BRING IT TO A BOIL, STIR IT UP AND SET THE BURNER TO LOW FLAME.

Pour the tomato sauce and crushed tomatoes into the pot.
then add cayenne and black pepper to taste. bring it to a boil, stir it up than set the burner to low flame.

Step 4: FRYIN' THE STUFF.

Fry the chopped peppers, onions, garlic and whatever else you have using the canola oil. fry until golden brown. flip/stir using spatula. if you want add some spices while frying.

Step 5: Pour the Fryed Stuff Into the Pot.

pour everything that you've fryed into the pot, including the little bit of oil left over.

Step 6: Finishing Touches

technichally, your done but if you want the flavor to really soak in your gonna have to let it stew for a couple of hours. i usually leave it on low stirring every half hour for four hours.

Step 7: SERVING SUGGESTIONS AND IDEAS

Matbucha is traditonally used as a spread for challa rolls.
it works great as a dip for tortilla chips.
also good as a taco filler.

serve cold.
