Introduction: How to Give Make Over to Leftovers in the Refrigerator and Fruit Basket?

We often buy fruits and vegetables from market in surplus so that we do not have to run to grocery store in the middle of week or fall short in the middle of cooking. Some of these like berries, banana, beans, and greens are more perishable than others. These either become over ripe or stale (loose crispy texture). Sometimes, our prepared dishes do not turn out that good but we have used costly ingredients for them but we can makeover these dishes or utilize the leftovers. It is always possible to use these concepts for non vegetarian foods as well.

Step 1: Stir Fried Rice Using Leftover Salad and Rice Coming As Supplement With Fish/chicken From Take Home Pack

We either buy ready to eat salad bowl from outside or make our own at home, the leftover salad gets sidetracked in the refrigerator and gets noticed only when we are making room for new arrivals. So is the case with rice that comes as supplement when we buy some dishes from takeaways. I make use these items to make a tasty stir fried rice.

You need:

  • leftover salad (sliced onion, peppers, tomato, zucchini, fruits and sprouts)(100g)
  • cooked rice (200g)
  • Olive oil or Canola oil (2 tea spoons)
  • Salt, tomato ketchup or soya sauce or chilli-garlic sauce

Step 2:

The recipe is very simple to make and requires hardly 5 minutes of time since rice is already in a cooked form. Heat the oil in a skillet or fry pan. Add the salad or cut veggies, stir and cook for 1-2 minutes with cover. Add rice and salt. Stir and then add one table spoon sauce of your liking (I used tomato ketchup). Garnish with shredded cheese (optional).
