About: Making Quick, Tasty Cheap Recipes and sharing them with the world.

This is a really quick and easy vegetarian quiche recipe.

Preparation time is minimal and it is truly incredibly tasty.

Please use the video as guidance and experiment with the filling!

Step 1: You Will Need...

Flan or Large Cake Tin

Butter/Oil for Greasing

Ready Made Shortcrust Pastry (Make Your Own If You Like)

Strong Nonstick Foil

Any Dry Pulse (For Blind Baking)

Shallots

Garlic

Plum Tomatoes

Milk (250ml)

Four Eggs

Two Different Cheeses (300g) - I used Cheddar and Red Leicester

Salt/Pepper

Fresh Basil

Step 2: Grease the Dish

Grease Your Flan Dish (A Large Cake Tin Will Work If You Don't Have One of these)

Roll Out Shortcrust Pastry and Mould Into Shape (Use a rolling pin if you like)

Give it a few pricks, cover with foil and blind bake with a dry pulse at 200 degrees for 30 minutes.

Step 3: The Filling

Make the filling by gently frying your shallots and garlic. Then add your plum tomatoes and when golden remove from the heat and leave to cool.

Whisk together four eggs and 250ml milk and then add 350g of your favourite grated cheese or cheeses.

Remove the baked pastry from the oven and allow to cool.

Step 4: The Build

Add the Onion/Tomato mix to the Pastry Case followed by the wet mixture.

Add more cheese, pepper and fresh basil if desired and bake at 180 degrees c for 40 minutes.

Step 5: Enjoy Your Quiche

Serve with a Green Salad and some dressing or whatever you like.

Maybe start again but adapt the filling, change the cheeses or do anything.
