Introduction: How to Make Pâté Au Chocolat
Why would I call such an easy to make dessert Pâté au Chocolat? Not because it's a crazy concoction featuring foie gras. I gave it this name because while it's actually quite easy to make, it tastes (and looks) fancy.
Step 1: Assemble Your Ingredients
Here's what you'll need to make these babies:
- 1 cup toasted nuts, coarsely chopped
- 1/2 cup half and half
- 2 tablespoons butter
- 1 1/2 tablespoons sour cream
- 1 teaspoon vanilla extract
- 5 ounces good quality dark chocolate
- 1 teaspoon salt
- 2 silicone molds (I used two heart shaped molds with a 1 cup capacity) or 4 cupcake liners
Step 2: Put the Nuts in Your Liners
Grab your silicone molds or cupcake liners. Divide the nuts evenly between them.
Step 3: Place the Chopped Chocolate in a Heatproof Bowl
Place the chocolate in a heatproof bowl and set to the side for the moment.
Step 4: Heat the Dairy
In a medium saucepan, combine the half and half, butter, and sour cream. Heat over low heat until the mixture comes to a simmer.
Remove the cream mixture from heat, and stir in the vanilla and salt. Pour the hot cream mixture over the chocolate. Stir until it becomes a cohesive mixture.
Step 5: Pour Into Molds
Pour in the cups with the nuts. Transfer to the fridge or freezer and let set until firm (this can vary but 1 hour plus in the fridge, 30 minutes plus in the freezer). Unmold when firm.
Step 6: Unmold and Serve
Gently unmold, and enjoy!
