Introduction: Lefse

This instructable will show you how to make homemade lefse.

You will need:

8 cups russet potatoes (riced)
½ cup heavy cream
½ cup butter or margarine (melted)
1 Tbsp. salt
1 Tbsp. sugar (more or less)
3 ½ cups flour

Wok or griddle
Large pot
Rolling pin
Ricer
Lefse turning stick or spatula
Clean dish towels

Step 1: Step 1

Peel and chunk the potatoes.  Cook in boiling water until tender.

Step 2: Step 2

Drain the potatoes and rice them while they are still hot.  (If you do not have a ricer, mash the potatoes until there are no chunks left.)

Step 3: Step 3

Add cream, melted butter, salt, and sugar.

Step 4: Step 4

Cool the mixture to room temperature.  Add two cups of flour to the potato mixture.

Step 5: Step 5

Roll out the lefse into thin circles.  Be sure to throw down a little bit of flour first so that it does not stick.

Step 6: Step 6

Use your lefse turning stick to get your lefse on the wok.  Be careful not to tear it.  Be sure to put a little bit of flour on the wok to prevent sticking.

Step 7: Step 7

Bake on the wok at 450 degrees.  When the lefse begins to brown and bubble, flip it over.

Step 8: Step 8

Remove the lefse from the wok.  Stack the finished lefse rounds between clean dish towels so that they do not dry out.  (Wipe excess flour off of the wok or it will burn.)

Step 9: Step 9

Serve warm with butter (and brown sugar if you prefer it).
