Introduction: Microwave Funfetti Mug Cake

Funfetti, aka sprinkles, aka candy pieces…whatever you want to call them, they are the very embodiment of the sweet, celebratory goodness that we associate with birthday cake. Today, I'm bringing you a means to literally have your cake and eat it too, all in under 5 minutes. I know, right!? All you need is a Mason jar (or mug), a few well-known cake making ingredients, and a microwave.

Yes, you heard me right. A microwave. This recipe doesn't even require the use of an oven, so really, what excuse do you have not to let the funfetti flow? (I really like using the word funfetti in a sentence)

Plus, added hipster points for the Mason jar, so even your "small batch" friends will love it.

Step 1: Gather Your Supplies!

For the cake

3 tbsp flour

1 tbsp butter

1 egg yolk

2 tbsp sugar

1 tbsp heavy cream (or milk)

1/4 tsp baking powder

1/2 tsp vanilla extract

1 tsp rainbow sprinkles

For the frosting

3:1 ratio of powdered sugar to butter

  • 3 tbsp butter, softened to room temperature
  • 9 tbsp powdered sugar

1/4 tsp vanilla extract

1 tsp cream (or milk)

Step 2: Mix Your (Cake) Ingredients

Melt the butter in the microwave in a mug, or for maximum lonely hipster points, a mason jar. It should take about 15-30 seconds. When melted, beat in egg, sugar, cream, vanilla extract, baking powder, and flour. Carefully distribute the rainbow sprinkles through the batter – don’t stir too much, or all the colors will run!

Step 3: Microwave Your Mixture

Cook in the microwave. Your cook time will vary between 45 seconds and 1.5 minutes depending on your wattage. I like to cook mine at 700 watts for 1 minute, 30 seconds. Your cake will be finished when the top of the cake looks dry. (I like using a clear mug/cup because you can also see if the sides of the cake are still liquidy, in which case, you’d need to cook it for another 10-15 seconds.)

Step 4: Frost, Admire, & Eat!

While the cake cools, use a whisk or fork to beat together the butter, powdered sugar, vanilla extract, and cream for the frosting. Spread on top of the cake once cool (yes, you have to be patient here...or else it’ll melt). You can use a frosting pipette or bag if you want more control.

Top off your frosted cake with rainbow sprinkles. If it’s your big day, add a birthday candle. Okay, maybe even if it's not your birthday. Because, sprinkles.
