Introduction: Microwave Omurice (Japanese Omelet Rice)

Omurice is a delicious fusion dish combining Japanese fried rice, a French omelet, and American ketchup. It also makes an awesome breakfast or single-serve meal any time of the day! It is as tasty as it is aesthetically pleasing too. Traditionally, making a true omurice requires cooking each component separately in skillets and omelet skills to put together the perfect plate, but this simplified recipe gets you almost all the flavor and a beautiful dish in less than 10 minutes with only a microwave.

Step 1: Gather Your Ingredients

Here's everything you need for one dish:

  • Rice (cooked) - enough to almost fill a small bowl, about 1 to 1.5 cups
  • 1 Egg
  • Milk - 1/2 tsp
  • Diced ham (or crumbled sausage or bacon) - 3 tsp
  • Frozen veggies (peas, or peas/carrots/corn mix) - 2 tsp

Other seasonings:

  • Salt and pepper
  • Ketchup - 1 tsp
  • Soy sauce - 2 tsp
  • Sesame oil - 1 tsp
  • Pam or other spray grease

Step 2: Prep the Rice Mixture

Put all the rice into a bowl and mix in 2 tsp of soy sauce and 1 tsp of ketchup.

Then mix in the ham (or other meat), and veggies into a bowl. I shredded the ham by hand, you can also dice it or use crumbled sausage or bacon.

Microwave for 60 seconds, checking to make sure the frozen veggies are heated through. Once the rice mix is heated, stir in about 1 tsp sesame oil. This gives the rice a fragrant taste that mimics fried rice.

Step 3: Prep and Cook the Egg Mixture

Important!! Use the Pam or spray grease to grease the egg bowl, otherwise the egg will stick to the bowl and you'll end up with an ugly omurice.

Crack one egg into a small, round bowl. Season with salt, pepper, and 1/2 tsp of milk (helps make the egg a little more fluffy).

Using a fork, whisk everything together until slightly foamy on the surface.

Microwave the egg bowl for 40 seconds at 1000W power. Check the egg and if it's still liquidy, microwave more for 10 seconds at a time until it is fully cooked.

Step 4: Putting It All Together!

First, loosen the egg from the bottom of its bowl a bit. Put all of the rice mixture in and press it firmly into the bowl. Then cover that bowl with a small plate and...

Flip! Tap the bowl a bit to loosen everything and carefully remove the bowl.

Out comes a perfect omelet rice!

Top with some ketchup and dig in!
