Introduction: Orange Cookies With Fresh Mint and Black Garlic

Do I have your attention yet?   Ok, they sound disgusting, but oh my gosh, these are SO GOOD!

Black garlic is garlic that has been fermented for 40 days.  Learn how to make your own here!  This process gives the garlic a tangy, raisiny flavor that pairs perfectly with orange.  To accompany these flavors, I added fresh mint and walnuts.  Looking at that list of ingredients, you might not be thinking cookies - but after you try this recipe, you'll never think the same way again.

This cookie is very simple to make, and the resulting flavors are fresh, bright, and complex.  For added punch, I recommend doubling the amount of garlic.  I was being hesitant when I tried this recipe, so I went easy on it.  The garlic was hardly detectable at all, but the orange and mint were in perfect balance! 

These crazy garlic cookies are some of my first ever original cookie recipes.  If you can get a hold of black garlic, you're going to LOVE these!  And if you can't, well, they're even good without it.



Ingredients

2 sticks (1 cup / 227g) butter
1 cup (200g) sugar
1/2 teaspoon salt
1 teaspoon orange zest
2 teaspoons chopped fresh mint
1/2 cup (75g) chopped walnuts
1 egg yolk
1 whole egg
2 teaspoons vanilla
2 cloves black garlic
2 1/2 (275g) cups flour


Directions

Cream together butter, sugar, salt, zest and mint until light and fluffy

Add egg yolk and combine.  Add whole egg, vanilla, and black garlic, and combine.

Slowly add in flour and nuts until just combined.

Form into two logs, wrap in plastic wrap and refrigerate for at least one hour


Bake

Preheat oven to 375F

Slice logs into cookies and bake for 6-8 minutes until done.
