Introduction: Refrigerator Pickles-First Attempt

Hi everyone, this is my first attempt at making refrigerator pickles. I really never thought about it until my Uncle brought over half a truck load of cucumbers (I may be stretching it a tiny bit :p ) and my seven year old son insisted I learn how to make pickles. So, after a little research this is what I came up with.

Step 1:

The first thing I did was slice a large white onion as thinly as I could with a sharp knife.

Step 2:

Then I sliced about 7 medium size cucumbers to about 1/8 inch thickness. I really need to invest in a mandolin!!

Step 3:

In a large bowl (which I'm pretty sure was too deep, you'll see why I say this in a couple more steps) I layered the cucumber and onion.

Step 4:

I also sliced some garlic very thin. This was two very large cloves of garlic, but you can do this to taste.

Step 5:

In a sauce pan I brought 1 1/2 cups white distilled vinegar, 1/4 cup sugar, the sliced garlic, 1 tsp. salt (or to taste) and a few cranks of freshly ground black pepper to a boil. I let this boil for 1 minute and then with teary eyes (vinegar is not nice when it's steamy!!) I poured it over the cucumbers. I noticed it only filled the bowl half way so I doubled the recipe. This time only adding about 1/8 cup of sugar 1/4 tsp salt, a little more pepper, and no garlic. Then I poured that over the cucumbers and they were covered that time. I put the lid on my bowl and they've been in my refrigerator for a few hours now. I hope they turn out!! I'll update and let you all know!! Wish me luck!!

Step 6:

Let stand in fridge at least 24 hours before digging in.

UPDATE: These Pickles were great!! I shared them with my parents and grandparents and they all really loved them. They are nothing like pickles you buy in stores so don't expect that. They're delicious though!! I've been requested to make them again!! :)
