Introduction: Sesame Fried Shrimp

Shrimps are the most popular shellfish anywhere in the world. Shrimps are high in protein and low in calorie. Although they taste great in any way you cook them - I personally prefer them fried coated with hot red chili powder. They remain succulent, juicy and firm. I share two ways of frying shrimp here : One is mild for milder palates while the main recipe is for the adventurous.

Step 1: Secret to Keep the Shrimp Juicy and Firm

First Wash the shrimp thoroughly and devein it.
For every 500 gm of medium or large Shrimp, use 2 tablespoons of salt and one tablespoon of Baking soda. Coat the shrimp with these salts and keep in the refrigerator for at least an hour. Then rinse and use. The common salt and the baking soda work to trap the moisture and keep the shrimp firm in texture. For more details on the preparation of Shrimp refer to this page:

I am going to show you 2 ways to fry the shrimp. One method is hot and spicy while the other is more sedate - encased in a batter.
We will start with the fresh raw shrimp. As I said earlier, coat them liberally with salt and baking soda well in advance.

Step 2: What You Need

1. 700 Gms of Large Shrimp with tail

2. White sesame seeds 100 gms

3. Corn flour 200 gms

4. Vegetable oil

5. Red Chilli powder 2 tablespoon (adjust as per taste)

6. Large egg 1

7. Fish Sauce 2 tablespoon Or Salt as per taste

Step 3: Hot Fried Shrimp

This is probably the simplest fried shrimp and you can make them in a short time. But the end result will be well worth it. You can easily devour the entire lot in no time.


Method: After preparing the raw shrimp, coat them with fish sauce and chilli powder. Set Aside for 10 minutes. Heat oil for deep frying in a wok. Wait till the oil is hot. Then deep fry the shrimp in batches. Rest the fried shrimp in absorbent paper.

Step 4: Sesame Fried Shrimp

Method:
After preparing the raw shrimp, coat them with fish sauce and chilli powder. Set Aside for 10 minutes. Beat the egg till it is fluffy. Then dip the shrimp in egg and then coat it with corn flour and finally roll it on sesame seeds. Now deep fry them in batches.

The nutty flavor adds to the crunchy taste of the shrimps.
