Introduction: Simple 8-ingredient Multi-Cooker Turkey Noodle Soup

My oven "died" recently and it can't be fixed for about a week. I already had meals planned for the week and all ingredients on hand to make them! Now what? I decided to put my Ninja 5-in-1 Multi-Cooker into full gear. I mean, what CAN'T you make in that thing? My meal project for today is Turkey Noodle Soup. I must say, once I got all the ingredients together and started cooking..... it couldn't have been easier! Of course, you can make this recipe on your stove top following the same directions but, when there's no stove available.... this multi-cooker works great!

Step 1: Equipment

Ninja 5-in-1 Cooker or Instant Pot or equivalent appliance
cutting board

sharp knife

large mixing spoon

Step 2: Ingredients

3 tablespoons canola oil (or equivalent amount of turkey fat from homemade broth)

1 large onion, chopped

4 stalks celery, sliced

2 carrots, peeled and sliced

2 quarts turkey stock (I'm using 1 quart prepared and 1 quart homemade)

8 ounces extra wide egg noodles (from a 12 ounce bag)

3 cups cooked turkey, chopped (not shown in this picture)

2 tablespoons dried parsley flakes

Step 3: Getting Veggies Ready (Mise En Place)

Prepare ingredients: chop onion, slice celery and slice carrots

Step 4: Set Cooker

Turn on multi-cooker. Insert cooking pot and set unit to sear/saute. Set temperature to Med/Hi and let warm for one minute.

Step 5: Add Oil

Add oil to the pot (or turkey fat if available). I'm using turkey fat from the turkey stock I made.

Step 6: Add Prepared Vegetables

Add prepared vegetables (and salt if desired) to the pot. Mix well and cook 4-5 minutes or until onion becomes fragrant and just starts to soften.

Step 7: Add the Broth and the Noodles

Add the turkey broth. Turn heat to High and bring to a boil.

Add the noodles. Mix well and return to a boil. Reduce heat to Med/Hi and cook until noodles are cooked al-dente, about 6 minutes.

Step 8: Add the Remaining Ingredients

Add the chopped turkey and dried parsley flakes. Mix well. Bring to a simmer and cook until heated through.

Step 9: ENJOY!!
