Introduction: S'more Pie

One of my all-time favorite treats are s'mores - that sticky, messy, marshmallow-chocolatey goodness between two pieces of graham crackers. Nothing can top that deliciousness... until now.

I present for your eating pleasure, the S'more Pie!! Everything you ever wanted and more.

This is a pretty simple/quick pie to make, and lots of messy fun for the whole family to help create. Please give it a try and let me know how it goes!

Pro Tip 1: If you are not a fan of the super melty marshmallow, try putting the pie in the freezer for a few hours. This also helps to make the pie a bit easier to cut (see image of perfect slice vs. slice in all of its melted glory).

Pro Tip 2: You don't have to eat the whole pie in one seating; it stores well in the freezer and can be defrosted/heated (or eaten frozen) up to 1 month after creation.

Step 1: Ingredients

  • (1) stick softened butter
  • (1/2) cups white sugar
  • (1) egg
  • (1) tsp vanilla
  • (1) cup flour
  • (1) cup Graham Cracker Crumbs
  • (1) tsp baking powder
  • (7) oz Marshmallow Fluff Creme
  • (8) mini Hershey Chocolate Bars or 2 large bars (or 3 if you LOVE chocolate)
  • (1) cup mini marshmallows
  • (1/4) cups chocolate chips
  • 9" pie dish
  • Pam cooking spray
  • hammer (optional)

Step 2: Making the Dough/Crust

First, preheat the "fire" (oven) to 350F.

Now let's start by creating the dough/crust...

Mix together the sugar, butter, egg, vanilla and baking soda. Then slowly add in the flour until the crust dough is completely mixed together.

Now grab your hammer (or your preferred graham cracker crushing tool) and crush up the graham crackers. I found that one of the packets is roughly a cup of crumbs. Once you have crushed those crackers, stir the crumbs into the crust dough until a ball forms.

Then take the pie dish and spray Pam (or an equivalent cooking spray). Split the crust dough in half (one half is for the bottom/outer crust, the other is for the top) and press the bottom/outer half into the pie dish; set the other aside, as it will be used in a later step.

Step 3: Pie Filling

Now let's fill that pie!

There are 3 layers to the pie: Marshmallow fluff, Hershey's chocolate, and more marshmallows!

Layer 1: Scoop out the marshmallow fluff the best you can (super sticky!) and spread it out on the crust.

Layer 2: Break up the chocolate bars into single prices and spread them evenly. Add more chocolate if you're so bold - definitely don't substitute the bars with chocolate chips, as the Hershey's chocolate bar is KEY to replicating that s'more we all love.

Layer 3: And for good measure, pour the mini marshmallows on top for extra gooey-ness. Remember, this is no time to be sparse!

Step 4: Toppings

We're almost there... just a couple more things to finish the pie off!

Take the remaining half of crust dough that was set aside and spread it over the sticky, marshmallowy, chocolatey-goodness that is our pie filling. And then, since we obviously didn't add enough chocolate inside, spread some chocolate chips on top of the crust.

Baking and Eating the Pie:

Now bake that beauty in the oven at 350F for about 15 minutes or until the crust is golden brown.

Let it cool off for at least 5 minutes (that melted marshmallow is HOT) and then enjoy eating your well-deserved S'more Pie.
