Introduction: Snowballs for Breakfast

In the hot days of summer, frosty treats should not only be for afternoon snacks or dessert after dinner. Why not freeze your breakfast food and enjoy a refreshing start to the day? Of course you could use store bought frozen yogurt and store bought granola to make these luscious snowballs. But...those are laden with way too much sugar and ingredients you can't even pronounce.  And...that's just not the way we roll here on Instructables! This frozen yogurt is so easy--only 3 ingredients. The granola is also quite easy, and you can find my recipe here. Change out the nuts and fruits to make it perfect for your taste. 

Step 1: Gather the Ingredients



3 cups plain non-fat Greek yogurt
2/3 cups honey
Zest of one lemon

That's it! 

Step 2: Making the Frozen Yogurt

Whisk the yogurt, honey, and lemon zest together until smooth. Pour into your ice cream machine and freeze until thickened. Mine took about 20 minutes, but each machine may be a bit different. Scrape into a container you can put into the freezer. Freeze about 2 hours to firm up before making the balls.

Step 3: Make the Snowballs

Place 2-3 cups granola into a flat dish. Form the yogurt into 2-inch balls with an ice cream scoop. Coat gently with the granola and place on a plate. Put the plate of snowballs into the freezer to firm up; about a half hour should be enough. Wrap each snowball in a square of parchment paper and tie with raffia. Store the little packages in a large zip bag in the freezer for a fun little treat on a hot and humid morning. They will keep for 1-2 weeks. Makes about 10 balls.
