Introduction: Strawberry Dipped Ice Cream Bars

Craving a sweet, creamy treat then look no further than this! These strawberry dipped ice cream bars are sure to delight that sweet tooth of yours or beat the heat on a sunny day! Sweetened with agave and fresh strawberries they are truly guilt-free.

Just a few ingredients are used, and it can be customized in any way to suit your cravings or your inner crazy. It uses a popsicle maker for ice cream bars.

You'll never want to make popsicles again! Popsicles will become boring! You'll be in love with this recipe.

It's OMG on a stick!

Step 1: Ingredients

There aren't too many ingredients you need. For a dairy-free recipe use 3 cups of full fat coconut milk. You will need a popsicle maker for this.

For the ice cream base you will need:

  • 2 Cups Milk
  • 1 Cup Cream
  • 1/4 Cup Agave*
  • 1-2 Teaspoon Vanilla Extract

For the strawberry magic shell you will need:

  1. About 15 Strawberries
  2. 1/4 Cup Agave*
  3. 3/4 Cup Coconut Oil

*You could use another sweetener instead. If you use sugar I would suggest using 1/2 cup.

Step 2: Mixing the Ice Cream Base

Mix the milk, cream, agave, and vanilla extract in a bowl. Scrape the sides and make sure its all mixed together.

Step 3: Preparing the Strawberries

Wash the strawberries and cut the stems off.

Step 4: Mixing the Strawberry Magic Shell

Combine the strawberries, coconut oil, and agave. Put it into the microwave for 20 seconds, blend it until it's all mixed together, and then put it into the microwave for another 20 seconds.

Step 5: Slicing the Strawberries

This step is optional. If you want slices of strawberries in the bar itself, and then slice thin a couple of strawberries.

Step 6: Making the Ice Cream Base

Pour the ice cream base into the popsicle maker. If you decided to do the previous step, and then drop a couple of slices in. Immediately put the sticks in.

Step 7: Dipping

Immediately after removing the ice cream bar from the popsicle maker, dip it into the strawberry magic shell. After a good coating is applied, pull it out, and let it dry for 5 seconds.

Step 8: Have Fun!

You're magnificent ice cream bar is done. Enjoy it and have fun out in the sun.
