Introduction: Tortilla "pizza"

Quick, easy and delicious pizza. Here is what you'll need:

  • Tortilla bread, one per serving
  • Tomato paste
  • Toppings of your choice
  • Cheese

Step 1: Assembly

Simply spread some tomato paste onto the tortilla bread, followed by the toppings and the cheese. Stick your pizzas into an oven at 225° C (about 400° F). When the cheese looks melted the pizzas are done, however leaving them in longer will of course result in a crispier crust. This will take between 10 and 20 minutes, depending on your oven. Pizzas not consumed immediately should cool off on a cooling rack to avoid developing a soggy bottom.

If you have the time, I would suggest preparing a simple pizza sauce by simmering two parts tomato paste with one part water and some spices. I like adding some shopped spinach and grated carrot to make it "healthy". Make more than you'll think you'll need and save what you don't use in the freezer. The same thing goes for the toppings and the cheese, that which you don't use immediately can be frozen and used next time.

The resulting pizzas are not real pizzas, but they are pizza-like enough to satisfy cravings. The crust is thin, to say the least, but crust-like enough. The pizzas are healthier than real pizzas, and cheaper(depending on your toppings and the amount of cheese).
