Introduction: Vegetarian Noodle Soup

Quick and easy Noodle Soup recipe…

Here’s a quick and easy to do recipe of my version of noodle soup…

Ingeredients:
Vegetable stock (I use cubes)
Water for the stock
Pack of Beansprouts
Sliced Carrots
Sliced Onions
Finely chopped Onions
Finely chopped Garlic
Chinease lettuce
Cabbage strips (Sometimes I add the canned bamboo shoots and water chestnuts or any other Stir-fry type Veg I have lying around or comes in those ready mix packets, even bell peppers taste good)
Spring onions to garnish
Tablespoon of oil
Soya sauce
Tomato puree
Packet of cooked noodles ( for when i’m lazy or you can buy the dry noodles and cook them)


First heat the Oil in a saucepan (big enough for the vegetable stock to broth into) and add the finely chopped garlic, let it sizzle slightly and then add the onions to cook (some people like to add ginger here). Then add the stir fry vegetables with a dash of soya sauce, so the rest of the onions, carrots, peppers, but not the cabbage or anything that will wilt easily, save these for the end!

Then add about 600ml of water (depends on stock cube and quantity of veg, if more add more water) add the stock cubes until it boils. Add a squirt of tomato puree. Let the Vegetables simmer and become soft, In the mean time cook the noodles if you have brought the dry packet. Finally add the water chestnuts, bamboo shoots, bean sprouts, spring onions and the lettuce. Add the noodles. Let them cook a little for about 2 minutes… and all done!….. Sometimes I add a dash of lemon juice and a little bit of my fav chilli sauce (Maggi hot n sweet) to make it that extra bit sweet n sour! Obv add salt, pepper and herbs as per taste… Enjoy…
