Introduction: Waldorf Salad

This has to be one of the easiest salads to produce, yet can look really sophisticated for a starter, light lunch or a snack. Even the name sounds sophisticated.

There are so many varieties of apples available this autumn, and this works with any crisp apple, whether your taste is for a sharp Granny Smith, or my favourite a Worcester Permaine.

Step 1: Waldorf Salad Ingredients


A large helping can be made from:

Apple 1 medium eating chopped
Celery 3 medium stalks chopped
Walnuts 8 broken into pieces
Mayonnaise 1 dessert spoon

Pepper

Amazingly a large tasty helping like this will only be about 250kcals too. As I like to use a sweeter apple I add a squeeze of lemon juice to the mayonnaise which I think brings out the apple's flavour, and slackens the mayonnaise making it coat the ingredients better.

There are no rules you can add more mayo for a more luxurious looking dish or more nuts. Go ahead have a Waldorf.
