Introduction: Woah Nelly Frittata!

After hosting a wine and cheese party, I was left with a LOT of cheese and other miscellaneous appetizers like veggies and dip.

I took several types of cheeses, the veggies and the constant staple in my fridge: eggs, and turned it into a frittata!

Here's a tasty way to get rid of leftovers.

Step 1: Ingredients

Like I mentioned, I used a lot of leftover veggies (from a veggie and dip tray). I would recommend adding whatever veggies you have or like.

Used in this frittata:

  • red and yellow pepper
  • mushrooms
  • onions
  • feta cheese
  • monterey jack cheese
  • brie cheese
  • parmesan cheese
  • eggs

If you've got broccoli, hot peppers, zucchini, etc., these would all work well in it.

Step 2: Scramble

Crack 6 eggs into a bowl and put the chopped up veggies and cheeses into the mix.

Save some cheese (about 1/2 cup) for the top.

Pour egg mixture into the frying pan on medium high heat. You want to cook just the bottom of the mixture for about 4 minutes.

Add the remaining cheese to the top of the mixture. You're ready to bake it now.

Step 3: Broil

Put the whole frying pan with mixture into the oven on a high broil for about 5 minutes. You want the cheese to be bubbling and golden.

Remove from the oven and allow it to cool for a few minutes before serving.

Note: Your frittata can be put in a tupperwear and eaten for breakfast or kept in the fridge for a few days.
