Yes. The Japanese pickle cabbage without vinegar to keep the probiotic benefits. Here's an Instructable that explains the process. Keep in mind that you MUST weigh down the cabbage (as it tends to float), so it's not quite as simple as throwing everything in a covered jar.
yes, its the same process as making kimchi I think.
