Ceiling fan control switch help

I have a soldering fume extractor that is running off of 110v, and I wanted to attach a potentiometer to it so I can control the speed in the form of a ceiling fan control switch. Can someone please help me out on how to wire in a variable speed fan switch that has 3 wires coming from it?

I suspect the wires are colored Black = Hot, White = neutral and
Green = safety ground.
These colors indicate a fan that is an induction motor that is a difficult fan
motor to speed control.

Fans actually unload ( use less energy ) as you restrict air intake.
If mechanically feasible install an adjustable air flow limiting baffle to work the
fan effectual suck.

Finally certain so called full wave lamp dimmers can control induction fans.
