Chewy Scones?

I love scones that are chewy with cheese, bacon and jalapeno peppers. I would like a recipe. I have attempted to make them but can't get that chewy nature that I love.

Scones are typically made by cutting butter into dry ingredients resulting in a light and flaky texture. If you want a chewy texture try mixing the butter more or use a slightly more room temperature butter instead of cold. More gluten strands/bonds will form the more dry and wet ingredients are mixed together. Gluten is what creates a chewy texture.

Excellent with try that out. I was going to reduce the Baking Powder but from reading your great lectures I see what you mean. Thanks again... will let you know how it works out.
