Flour and Humidity?

I live in an area that's cold and dry in the winter and hot and humid in the summer. Is there anything that I can do to compensate for the moisture in the flour? I recently made bread that needed a lot of extra water before it looked like the dough on the TV program. I expect to have problems if I can't actually see what it should look like.

My tiny apartment has wild temperature fluctuations,and living by the ocean causes my ambient humidity to swing quite a bit. I started proofing all my loaves in oven bags, inside an empty cooler. It seems ridiculous, but it is deliciously effective.
