How do you make gluten, wheat, and milk free ice cream or ice cream cake??
I have eczema. I had it when I was a toddler and I still have it. =( So my doctor said I might be allergic to dairy products and I can't have anything processed . =(
eczema has been linked to 8 common allergens. The top of these are dairy, soy, egg, and wheat. There are some good alternative ice creams on the market, available in health food stores. "So Delicious" makes coconut milk varieties. Tempt makes some delicious hemp milk varieties.
Bring the soya milk, and vanilla pod to simmering point slowly over a low heat.
Remove the vanilla pod (wash the vanilla pod, dry and store in jar with caster sugar to make vanilla sugar).
Whisk the yolks, sugar and cornflour together in a bowl until well blended.
Pour the hot milk and cream on to the eggs and sugar, whisking all the time with a balloon whisk.
Return to the pan, (add vanilla extract if using) and over a low heat gently stir with a wooden spatula until thickened.
Allow custard to cool. Put in ice cream maker OR put on a plastic container with plenty of room. Put in freezer - Remove every 30 mins and whisk to keep ice crystals small. until frozen

Modified Mary Berry recipe.
Ingredients
570ml/1 pint soya milk
1 vanilla pod or ½ tsp vanilla extract
4 eggs, yolks only
30g/1oz caster sugar
2 level tsp cornflour
Preparation method
