How to make nitric acid using organic compounds ?

Natural-gas (organic) -> hydrogen + nitrogen (air) -> ammonia + oxygen(air) -> nitric acid.

If you want to start with material that is both  "organic", in the common sense of being "all natural", and organic in  the chemistry sense of the word, meaning containing molecules with carbon-carbon bonds, then I think the way to go is by building yourself a good old-fashioned niter bed, as described here:
