How to make nitric acid using organic compounds ?

Natural-gas (organic) -> hydrogen + nitrogen (air) -> ammonia + oxygen(air) -> nitric acid.

If you want to start with material that is both  "organic", in the common sense of being "all natural", and organic in  the chemistry sense of the word, meaning containing molecules with carbon-carbon bonds, then I think the way to go is by building yourself a good old-fashioned niter bed, as described here:

Supposing that niter bed works for you, and you successfully produce some KNO3, or similar nitrate salt, then the next step is this video from Nurdrage, appropriately titled "Make Nitric Acid - The Complete Guide"
