Once the first fermentation is complete and they are going in the fridge do you tighten the lids?
Also are there veggie's that work better then other

Yes, you do tighten the lids once the counter fermentation process is complete! I'll be sure to add that info into my class.
All veggies ferment equally well. My favorites are cabbage, carrots, cauliflower, Kale, collards, peppers, cucumbers, daikon, beets, and radishes. You can also add ginger and/or garlic plus spices to the mix if you like!
