More cuts of beef?

I want to place in the aging fridge more cuts of beef, but every of them placed at one week later, so to have every week some aged ribs. Do you think it's a good idea ?

I'm afraid that the new cuts of beef will affect with their moisture the old cuts.

You're right that monitoring the humidity will be important, but I think it should work provided you have good air circulation and space the meat to allow for airflow.

I've only ever done one large cut at a time, so can't comment on multiple cuts with any experience. Good luck!
