My Tagliatelle looks thin?

Thanks for the instructions but I have face a problem though, followed every step as you have instructed, made the tagliatelle and it looks great but just when I put them in boiled water they stick to each other and the look kind of thin compare to the commercial tagliatelle, I assume I had to stop on level 3 on the pasta machine. please correct me if I am wrong.

Hi danialsa,

The way pasta machine thicknesses are marked is different on all machines. Mine has '0' as the thickest setting and goes to '9', the thinnest. For tagliatelle, I usually stop at number 5, which is in the middle of the settings. It sounds like your machine might be the reverse (?). If so, I would try stopping one to two setting earlier so that the noodle is a bit thicker.

To avoid the noodles sticking, make sure to let the sheets of dough air dry until it is leather hard (this should take about 10 minutes, flipping them over after the 5 minute mark) before running them through the cutters.

If you did this and the noodles still stuck together when cooking, next time, try dusting the sheets with a very small amount of flour before putting them through the machine. It could just be that your kitchen was a bit humid and the flour help counter this.
