My first feeding question.?

Today is my first day of fermentation, very excited. After day 3 when I go for my first feeding and peel the skin back, does it matter what 20% I keep? Scoop from the top, get the goods off the bottom, around the edges or in the center? Does it matter? Mine has already started a bubble, even though my home is around 68F I think I'm lucky to have the SF Bay air. Thank you for your help and class.

BAY AIR! I miss it so. I started my starter there many years back, and moved it in a cooler with me to LA 8 months ago.

I would avoid the top, as it's dried out. Probably somewhere from the middle/bottom is fine. Good luck! Can't wait to see how it goes!
