What are the advantages/dis-advantages of using a polarized vs. a non-polarized capacitor?

Typically, capacitors over 1uF are polarized and capacitors under are non-polarized. Usually, the value of the capacitance determines the type used.

That said, you might sometimes find nonpolarized capacitors 1uF or greater.

Polarized are better suited to very particular DC electronics applications (such as smoothing out a power supply).

Non-polarized capacitors are better suited to certain AC electronics applications (such as in an audio speaker).

Usually, it doesn't matter.
