Rapid response temperature probe to check when baking done?

I've read recipes that call for inserting a rapid response temp probe (like Thermapen) into the item and if it reads, for example 200-210F, it is done. Are all baked items like cakes and breads considered done at the same temperature, or does the temperature depend on what you are baking?

This would be very easy, however, not all baked goods are done at the same temperature. If a recipe states a temperature at which the item should be done then follow that guideline, but it won't work across the board.
