Real chocolate cake recipe which doesn't sink in the middle.

Can anyone recommend a good chocolate cake recipe (not coco) which doesn't sink? I find mud cake recipes using coco powder bake up beautifully, but the taste of the coco lingers on. Any help would be greatly appreciated. Thanking you all in advance.

I assume you want to melt chocolate then? Coco powder, make sure it's real coco, is more 'real' then a lot of solid chocolate.

The reason they sink is because the melted chocolate is much denser than the powder. You will have to compensate somehow, maybe more egg whites. I bake but only from recipies so you'll have to find someone that has more experiance to say for sure, sorry.

I'll caution you again, I don't really know if it will work. I know egg whites can make stuff fluffier but you may want to spend a few minutes doing a Google search and maybe do a test first or have a back-up plan if it goes south.
I'd hate for my unknowingly bad advice to ruin your tea time.

If it works though then my official stance is "Of course it did." ;D

The first thing to do is make 100% certain your baking soda and baking powder are fresh.  It's imperative these levening agents are active to ensure a beautiful rise.  Here are some simple ways to test them.

It's also possible you're inadvertently over-mixing the batter.

You can also try using a simple flower nail.  Here's a tutorial that shows how to use one.

As bw says, it has to be a denser cake to deal with the weight works; or make multiple thinner cakes, then glue them together afterwards with delicious icing :D
