What is the ideal, minimum and maximum thickness on Ribeye?

That depends; how do you like your steak cooked?

Thicker steaks will cook slower than thin ones. I like my steaks on the rare side, so aim for ¾" or thicker. I doubt you'll find many Ribeye steaks that are less than ½" - those will cook very quickly, so keep an eye on them and a thermometer handy.
