Using Kitchenaid with dough hook?

You have not mentioned using a machine for mixing and kneading the dough. I have used the machine due to wrist injury that no longer allows me to do that much mixing by hand. Could you give me a quick step by step on this.

Totally! Full disclosure, I use my KitchenAid 85% of the time for bread, but I know that not everyone has access to that amazing kitchen tool.

Begin by putting all your wet ingredients at the bottom of the mixing bowl. Mix

Lift your stand, add all dry ingredients, Mix on Stir/low for 2-4 minutes, until all dry ingredients are incorporated.

Allow to rest for 10 minutes.

Turn your mixer to medium for 4-5 minutes. If the dough stays together as one entity, it is ready. If not, allow the dough to rest for another 10-20 minutes and try kneading with the machine again.

Any more than 4-5 minutes of mixing at a time and your gluten bonds take longer to re-coagulate.
