What can I use to preserve food (e.g. banana peel) for use as a prop?

I am putting together a display and I need realistic-looking food props (slightly decayed). Ideally I'd like to use real food and coat it in something that will preserve it from further decay - similar to using formaldehyde on human or animal remains.
Is this even possible with foods such as a banana peel? If so, what would be best?

Plasninate it, or fake it.

Buy plastic fruit and paint on the decay.

Cut pieces of yellow cloth-backed PVC to make banana peel.
As ork said, make a fake one and paint it. Silicone is probably your best bet.

Probably not practical. Plastics make more sense; modify and paint to look bruised/damaged.
Freeze dry it ?

Could you dry it with something like silica gel and then varnish it?
