What is a good macaroni and cheese recipe?

Not the Kraft crap in the box. Something made from scratch with (preferably) three different cheeses.

do you seriously want a recipe? if not then just go to walmart and buy the stouffer's family tray thing (red box contains it) (very good)

I'll try the Stouffer's Family Tray and if my cheesehead family likes it, then you will have the best answer.

I tend to limit myself to just cheddar (tradition and all). I start with a basic roux (tbsp each butter and flour, 1/3 cup milk or half-and-half), and melt into it anywhere from 1/2 to 1 cup of grated (use the little holes) sharp cheddar. That makes enough for two or three servings. More cheese if you want cheesy, less if you want creamy. ...Oh, um, duh. I just read Z1ggy's recipe; that's exactly what he's doing, making a roux. Since he wrote his as an actual recipe, it's probably more worthy of Best Answer than mine. I have also made it with smoked gouda, havarti, and even pepper-jack. I tried using goat cheese once, but the flavor is too delicate to stand out over the roux. I think that goat cheese (chevre) would work if you just put into the pasta straight, rather than making a sauce (but I haven't done this myself). After you make the pasta, put it back into the pot on very low heat. Cut the goat cheese into very small pieces (1 cm cubes or smaller), and just keep folding and stirring until it's melted and blended with the pasta. You'll probably need a whole 4 oz package.

Heres what i use to make a better tasting version of that pasta,broccoli,and cheese sauce package, Im sure you could add more then one kind of cheese. Let me know if it works well Cook Time: 10 minutes Ingredients: 3 tablespoons butter 3 tablespoons flour 1/2 teaspoon salt 1/8 teaspoon ground black or white pepper 1 1/2 cups milk 1 cup grated sharp Cheddar or smoky flavor Cheddar cheese Preparation: Melt butter; remove from heat. Stir in flour and seasonings. Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly, until thickened and smooth. Cook for 5 minutes longer; add cheese. Stir until smooth and well blended. Serve with pasta or vegetables. Makes 2 cups.
