Fungi, when breaking down organic material (your flesh,) release carbon dioxide if oxygen is present and methane if it isn't.
The damage you see in the picture is the result of several processes, the fungi attacking the tissue and your body's own antibiotic defense system.
Doctors can prescribe medications that are almost always effective in eliminating the fungal infection. Home grown remedies rarely, if ever, work.

You'd need to look into the respiratory and metabolic processes of the fungus you're interested in.

I'm going to bank on it not producing H2 or else there might be more fungal fires in the world.

Nope, not pure hydrogen. The biological processes of any fungi releases carbon dioxide and/or methane gas.
