african food!?

i would love any ideas regarding african-influenced cuisine. i went to Bolat in chicago and it was amazing! anyone have any recipes?

I lived in Kenya for several years in the Peace Corps.  The main food I saw the Kenyan's making and eating were Indian curries, chipati bread (also Indian/Pakastani) Street food includes, beef, lamb or chicken on skewers roasted over charcoal, either plain or dusted with curry powder or garlic powder.  Also maize roasted on the cob was very popular (and good!)

I served mainly in Nairobi, and Mombasa, where English foods are widely eaten -stews, porridges etc. 

There are tribal foods -especially Masai, that use blood in the cooking, but I really don't like the iron taste it gives the food, so I didn't eat it much.  They also use curdled milk, which is another taste I couldn't learn to like, no matter how often I tried it.
