am wondering if there is a way to sanitize ink jet printer cartriges?

i want to make a printer that prints on food just need to sanitize cartridges first

Be careful - the heads are thermal - dry-printing or the "wrong ink" may damage them (as would icing - ink-jets need to be very close to the surface for good definition)

Wipe with alcohol.

The ink itself isn't food grade - you need a special cartridge with food colouring in it. I'd presume it's not toxic by any stretch, but I wouldn't eat a bunch of printed paper, let alone the ink.

I'd ask your local bakery that does image cakes to see what kind of printer ink they use.
