Bake potatoes at 400 degrees for 1 hour. Slice hot potatoes in half lengthwise. Carefully scoop the hot pulp into a large bowl. Mash with salt, pepper and butter. Stir in the onion, cheeses and spinach then heap the mixture back into the potato shells. To serve immediately: bake stuffed potatoes in 400 degree oven for 20 minutes. To make ahead: fill the shells but don't reheat. Put the stuffed potatoes on a cookie sheet and freeze until firm. Wrap the frozen stuffed potatoes in plastic wrap. To reheat frozen stuffed potatoes: allow to thaw and bake at 400 degrees for 20 minutes. She doesn't suggest microwaving them, though.
