egg free ?

in your gluten free pasta instructables you use eggs is there some substitute for eggs?

Hi Lucy,

I'm afraid I haven't tried using an egg substitute with this recipe.

If you're willing to give it a go, I would try using:

2 tablespoons of arrowroot powder + 3 tablespoons of water to replace 1 egg

Which means you would need to add 6 tablespoons of arrowroot powder and 9 tablespoons of (room temperature) water to replace the 3 eggs in the recipe.

I would also suggest adding an extra 1/2 teaspoon of xanthan gum to help adjust for the absence of the protein in the egg whites.
