I wondered why you use grease on the pan for the brownies and on the paper?
Should paper not be enough? or is it to gain a little bit of moisture on the borrom?

If you are using parchment paper it isn't entirely necessary. Just makes for easier release of the brownies. The grease on the pan before the parchment is simply to hold the parchment in place to keep the batter from running underneath.
